You've gotta love apples in the fall.
Apple cider, apples & caramel dip, apple pie...
Last year my mom, sister and I were lucky enough
to score about 8 or more bushels from my
brother's trees and we made oodles of apple
sauce (and jelly, too) for most of the family.
This year his trees just didn't produce
but I was able to pick up a 38 lb box of these
galas for a great price through a friend
who orders in bulk quite a bit.
I'm not overly-nuts about cakes but my kids are
so, to use some apples, I chose to try this recipe
from a friend. I've always liked to have
something homemade ready for the kids
(and any visiting friends)
after school, esp at the start of a fun weekend.
(I was cutting up/baking fresh pumpkin at the same time--
who needs candles and scented oils with all of that going on??)
Typically, I shoot for healthier but...well, it's fall
and it was Friday! Grab some coffee and
enjoy this one while it's still warm!
Cocoa Apple Cake
3 eggs 2 c white sugar
1 c butter, soft 1/2 c water
2 1/4 c flour 2 T (or more to taste) cocoa powder
1 t baking soda 1 t cinnamon
1 t allspice 1/2 c semi-sweet choc chips
2 c grated apple 1 T vanilla
- Cream together eggs, sugar, butter and water till fluffy.
- Sift together dry ingredients and add to creamed mixture; mix well.
- Fold in choc chips, apple and vanilla. Stir just until mixed.
- Place in greased/floured bundt pan. Bake 325' for 60 - 70 mins, till cake tests done.
(opt: add a choc glaze when cool. I just made a simple one
with butter, powdered sugar, cocoa, vanilla and milk)
